Camp ASCCA :: Food Services Director
Today our Food Services Director, Barclay Bentley, told us about what he does for Camp ASCCA. Bentley and his kitchen staff prepare the food campers and staff eats.
He said they prepare meals that the campers love. When Camp ASCCA is hosting other camps like Camp Seale Harris for diabetes, Bentley works with their dietitians to prepare meals that the campers can easily break down to decipher carbohydrates. This is intricate to the well-being of the campers. It helps teach the campers about their diabetes, and the way to break down their meals. Also, if there is a camper that has a food allergy Bentley will find things to prepare for this camper.
This morning we had our health inspection, and we scored a 96! Bentley said he was excited and nervous since this was his first inspection being the Food Services Director for Camp ASCCA. Bentley and the kitchen staff did great. They have another inspection for American Camp Association (ACA) next week. To be accredited is a great achievement for a camp to have. There are many requirements before accreditation can be given to the camp. Everyone has been working hard to meet the requirements and prepare for ACA.
